As a wife of the military we often undergo long term separations from our spouse. Add two little darlings under 3 and you often get a pressure cooker of frustration from the kids and the mom. So, in preparation for a quick upcoming move and need to prepare for dad's homecoming it's easy to take only 1 step forward in progress and get pushed back 3 steps by the little darlings.
Today prayers were answered, the universe smiled and I was given sweet relief. A friend came over today and helped organize some much neglected paperwork, another friend offered to watch the boys tomorrow so I can prepare for the homecoming and my mom agreed to take the boys home tonight for a sleepover. Thank you thank you thank you!!!
So, I took the opportunity to watch one of my favorite shows on right now (rest and relax) before getting back to focusing on the domestic work. With the calming of the chaos came inspiration! I have been on a coconut kick lately! It's probably my desire to return to my favorite Island Paradise retreat Parmer's Resort in Little Torch Key... It will happen, as soon as I can convince someone to watch the boys for a few days :) My last trip was January and the January before that so now with 2 little darlings I think mom needs that refresher a little more often, agree? St. Croix makes a naturally flavored sparkling water that I adore and suggest for folks who have to have the bubbly sometimes and give up the sweetened soda addiction. This week I found a COCONUT FLAVOR!!!
Back to the spritzer! While I have a wonderful palate and desire for variety in foods, I'm also budget minded and often cheap! I have no shame in buying boxed wine for those times when you just want a glass of vino and no time or desire to uncork the good stuff. Also found a bottle of 100% Pom juice on markdown (love the markdowns!) and whatever is not used in time will be frozen for future smoothies, spritzers or pops. According to Harvard, pom juice is beneficial for heart and prostate health and we have all heard about the benefits of wine right!
So now I am enjoying an episode of Master Chef and this Coconut Pom Wine Spritzer. Want to know how I bonded with my mother in law during my then boyfriend's deployment years ago? Spritzers! That's right, taught her everything I know about Vino :) Will share this one with her soon.
2 oz Pom Juice
2 oz Coconut Soda
2 oz Wine of choice (Zin, Chablis, Whites are best)
Mix with ice in a shaker or use to large cups/glasses for the pour and repour technique.
Serve in Martini glass or over ice.
